Feta, Chilli & Lemon Dip

Ingredients

Dip

  • 1 chilli, Red
  • 1 clove garlic
  • 1 lemon, The Peel and Juice
  • 1 small handful of fresh mint
  • 500 g feta cheese
  • 120 g olive oil
  • pepper, To taste

Recipe's preparation

  1. 1. Add lemon rind, garlic, mint and chilli, mince 3sec/Speed7 Scrape down sides of bowl 

     

    2. Add Feta, lemon juice and pepper to taste. Blend 30sec/Speed5 and drizzle in the oil while TM is operating.

    Hubby and I enjoyed this dip, however, unfortunately it was not a hit at my Thermo Party Puzzled. Hoping to maybe turn it into a sauce to go with pasta as there is soooo much of it left over.

    Dips always taste best made fresh on the day, however I would say prepping the day before should be fine, as long as you keep it refrigerated!
