  • 1 clove garlic
  • 1 brown onion, peeled and halved
  • 2 granny smith apples, cored and quartered
  • 1000 grams very ripe tomatoes, halved or quatered
  • 120 grams sugar
  • 120 grams apple cider vinegar
  • 25 grams salt
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Granny Sauce
  1. 1. Put garlic and onion in bowl Closed lid chop sp 5 3 sec

    2. Add apples and tomatoes. Chop Closed lid sp 5 3 sec

    3. add all remaining ingredients.

    4. Cook 60 min Varoma MC off sp 2. Use Simmering basket on the lid to prevent splashes.

    5 Blend commencing at speed 3, gradually to sp 9 1 Minute

    5. Consistency check. This is where the juiciness of the tomatoes can create a thinner sauce and extra time is needed. Add time 20-30 minutes Varoma Sp 2 to allow the sauce to reduce down and thicken. MC off to allow steam to escape, with Simmer basket in place for safety. Repeat if necessary.

Tip

This recipe originally made and passed to us by my grandmother involved a lot of sugar, 4 kilos of tomatoes, a big pot and a straining step! I have reduced it to suit the size of the tm bowl, cooking time is 1-1 1/2 hours not 3, and with our blending function the straining step is completely omitted. The original recipe had about over a kilo of suger (280 gm in initial calculations) but I found this to be simply too sweet. I have more than halved that sugar ratio for this recipe. Would love to know how you go. Remember to use the simmering basket and take the time for the reduction to thicken the sauce. Enjoy.
