Kale Pesto

Ingredients

1 jar(s)

Pesto

  • 1 clove garlic, peeled
  • 50 g parmesan cubed
  • 100 g Cashews
  • 1 bunch Kale, Small (approx 50g), washed & stems removed
  • 1 tbsp lemon juice
  • 1 pinch salt/pepper, to taste
  • 30 g oil, to taste

Recipe's preparation

  1. Add garlic and parmesan into the bowl. Chop for 10 seconds, sp 5.

  2. Add cashews, kale, lemon juice and season with salt and pepper - pulse on turbo 4-5 times until combined. Scrape sides down.

  3. With blades on sp 4, pour in oil through opening until desired consistency.

Tip

Serve as a dip, stuffed in chicken, with pasta, on brushetta.

    This was really delicious and very easy. I veganised it by using half vegan "parmesan" and half nutritional yeast to give it a cheesy flavour. I also added some basil which I had to use up. Topped onto my butternut squash ravioli. Lush 😍

    I can't work out how to edit sorry - but wanted to add that instead of cashew you can of course swap for pine nuts or almonds.
