No Fail, No Fuss, No Butterfly, Whole Egg Mayo

Ingredients

You need:

  • 1 clove garlic, optional
  • 1 egg
  • 1 heaped tsp mustard, dijon, etc
  • 1 tablespoon apple cider vinegar
  • Salt and pepper, to taste
  • mild/mellow olive oil (or flavourless oil of choice), approx 250g, but no need to measure

Recipe's preparation

  1. 1. Optional:  chop garlic clove 1 second sp7.

    2. Add egg (white and yolk), mustard, vinegar, salt and pepper to the TM bowl.

    3. Set timer for 4 mins, temp 37, sp4. 

    4. After 1 minute passes (3 minutes left on timer), hold MC down (so it doesn't float) and pour oil directly and steadily onto the lid until it reaches the top of the rim. 

    5.  Sing a merry tune, do a little dance, daydream and plan what to use the mayo for (while still holding the MC down), until all oil has disappeared inside the bowl.  tmrc_emoticons.)

    6. Remove lid and celebrate the success of lovely, homemade whole egg mayo.

Tip

Store mayo in the fridge in an air tight container.

 

Instead of holding the MC down, half fill it with water to weight it down.

    Yum! I've had several attempts at making Mayo, none that I would consider successful! This is def the best so far and will be my go-to. I used Extra-Virgin Olive Oil (I don't like the health implications of Seed 'Vegetable' Oils like grapeseed, canola etc), included the clove of garlic, and after initial taste-test, added a little extra pepper and some Garlic-Sea Salt.     Sometimes this recipe splits for me. I just pour it out into a jug. Then put another egg into thermi and start speed4 37° again, pouring the split mayo in SLOWLY at the oil step. I don't know why I blow it sometimes, but thankfully I know how to fix it!

    Very easy to make. Did exactly as per instructions adding 250ml oil. Worked well and set nicely. Only thing I would do next time is use less olive oil as it has a distinctive oily taste even though I used light flavour oil.
    Luckily I only need it to make some mini bread rolls. Cooking 7

    Why is it runny? I've noticed somethings when I've made my mayo runny - I've used a Coles Dijon Mustard Smooth And Mild 200g OR I poured in the grapr seed oil too fast. But I think it was because I used the Coles Dijon Mustard. I made a second batch and I used Maille Traditional Dijon Mustard 215g and I slowlty poured the grapeseed oil in.

    Absolutely love this recipe. As mentioned previously it is very similar to helmans mayo and it's the only mayo we have eaten in this house besides helmans. I personally prefer it without the garlic.

    I was nervous after having hit and (mostly) miss batches in the Thermomix but following these instructions made my batch turn out perfectly. Only variation was to use a tablespoon of mustard for flavour.
    I also heard Gordon Ramsay say NOT to season your mayo before mixing as it will increase the chances of it splitting. Thanks for sharing the recipe.

    i've been making homemade mayo for a while now it's by far better than the shop bought ones. I add extra splash of lemon juice to the mix giving it more tang.

    I store mine at the back of the fridge and its lasted for up to a month - still full of flavour.

    Makes the perfect aioli. I used grapeseed oil and in the last 20 seconds lifted the mc because i felt it would still have oil left at the end of the 4 minutes if I didn't . Turned out beautiful. Thanks for a great recipe.
