Parsnip,Cauliflower and Corn Dip

Ingredients

Dip

  • 150 g parsnips, Peeled and Chopped
  • 150 g cauliflower, Cut into 4-5cm Florets
  • 1 --- Corn cob
  • 2 cloves garlic
  • 30 g olive oil
  • extra olive oil
  • Salt and Pepper - To Taste

Recipe's preparation

  1. Pre-Heat Oven to 200c

    Place Parsnips, Cauliflower, Corn Cob and Garlic into roasting pan.  Drizzle with extra Olive Oil and sprinkle with salt and pepper.

    Cook in Oven until nicely roasted, about 30-40mins

    (Turn Corn once during cooking)

    Cut corn kernels off cobb and place all roasted veggies into TM bowl, add Olive Oil and blend 6-10sec / sp7

    Scrape down sides of bowl and check consistency, blend another few seconds sp 4 if required.
