Pepita Pesto

Ingredients

Pesto

  • 60 g parmesan, cubed
  • 1 clove garlic
  • 4 tablespoon Pepita Seeds
  • sea salt flakes, a good heavy pinch
  • 60 g olive oil
  • 2 and half --- Cups Baby Spinach

Recipe's preparation

    Pesto
  1. Place parmesan in TM bowl.  Grate at speed 8 for 6 seconds...until evenly grated.


    Add all other ingredients and process at speed 6 for 3 seconds or to your preferred consistency.


    Store in fridge.


    Tasty with all fish and meats.


    Mix through pasta.


    Dolop on soups.


    Use as a dip with naan or roti breads.


    Thinly spread on pizza dough before adding your regular topping.


    Add couple a tablespoon to warm quinoa, toss and add other finely chopped salad veg.

    Used this recipe as a base as I hardly had any of the exact ingredients and it still turned out great. Used cheddar cheese instead of Parmesan, a mix of pumpkin seeds, pine nuts and pistachio nuts, and silver beet from my garden instead of spinach with a few basil and oregano leaves thrown in. Tasted delish on my cauliflower pizza base, thanks!

    Ran out of pine nuts so made half sunflower seeds and half pepitas. Was lovely, couldn't tell the difference from my normal pesto.

    Thank you for this recipe. It was just what I was after, it was great. I used a mix of sunflower and pumpkin seeds. Stirred it through pasta.  tmrc_emoticons.)
