Ingredients

  • 150 g rocket leaves
  • 1 clove garlic
  • 100 g Roasted Cashews
  • 120 g olive oil
  • 80 g Parmesan cheese
  • 1 teaspoon agave or honey
  • 2 teaspoons lemon juice

Recipe's preparation

  1. Chop garlic and cheese on speed 9 for 8-10 secs. Add other ingredients and pulse on turbo a few times, scrape down sides, and pulse on turbo till you get your desired consistency

For variations, combine herbs and rocket e.g. parsley, coriander or basil

    Made this yesterday, nice quick easy good! I left out both, sweet and sour, and liked it as it was. We did use salted roasted cashews, though, and added even a bit more salt (garlic salt, to be precise). But my partner does like his food quite salty.

    Will definitely make this again!
