For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Place the onion and garlic in the Thermomix bowl and chop for 3 seconds on speed 7.
- Add the flour to the bowl and mix for 20 seconds on speed 3.
- Slowly add the water, stock concentrate, soy sauce, thyme, salt and pepper while the Thermomix is running on speed 3.
- Cook for 10 minutes / 90 degrees / Speed 3
- After 10 minutes, check the seasoning and adjust as necessary.

Tip
- You can subsitute the soy sauce for vegemite
- Use fresh herbs in place of dried if you have them
"Thickening" You can use the TM6 on thicken mode if you prefer a thicker sauce, otherwise to thicken you can add another tablespoon of flour and cook another 5 minutes / 90 degrees / Speed 3
