Tomato Chilli Jam

Tomato Chili Jam

  • 20 g olive oil
  • 1 red onion
  • 1 tsp sea-salt flakes
  • 850 g tomatoes (quartered)
  • 90 g brown sugar
  • 80 g red wine vinegar
  • 1 red chilli
  • 2 cloves garlic

Recipe's preparation

    Tomato Chilli Jam
  1. Place tomatoes in bowl and chop for 5 seconds on Speed 7.  Set aside.

  2. Place onion, garlic, salt and chilli in bowl and chop for 3 seconds on Speed 7.  Add olive oil to the bowl and saute for 3 minutes at 100 degrees on Speed 1.

  3. Add tomato, brown sugar and vinegar to the bowl and cook for 20 minutes at 100 degrees on Speed 1 or until mixture is slightly thickened and jam-like.

  4. Put hot mixture into a sterilised jar and store in the fridge.  Jam may be kept in the fridge for up to two weeks.

Tip

This jam can be used for lots of different meals.  Use as a marinade for barbecued or chargrilled meats, as a base for a pizza or add a few spoonfuls to any casserole dish.

2 tsp of dried chilli flakes can be used in place of fresh chilli.

Other spices or mustard can be added to the bowl with the onions to give a different flavour.

    Sorry Soozee, I think this was the first recipe I put up and there were a few teething problems!!!  I have now amended the recipe (hopefully!!) to include the 2 cloves and garlic and to include the saute step.  Thanks for pointing out, Simone tmrc_emoticons.)
