Autumn Spiced Sweet Potato and Carrot Soup

  • 1 brown onion, large
  • 2 garlic cloves
  • 40 grams Ghee
  • 1 level tbsp curry powder
  • 1 heaped tablespoons Raw Honey
  • 2 Sweet Potatoes, small
  • 2 carrots, large
  • 1 Fuji apple, medium
  • 1.5 litres chicken stock, up to the 2L mark

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place onions (halved) and garlic into thermomix and chop 5 seconds/speed 5 scrape down sides, add ghee and saute 2mins 30 seconds/100C/Counter-clockwise operation speed 1 then place sweet potatos, carrots and apple(all quarterd) in bowl and chop 5-10 seconds/speed 5 scrape down sides, pour in stock up to the 2L mark. Add in curry powder, honey and salt and cook 18mins/100C/speed 2.5 once cooked, pour out half and set aside, blend remaining half 1min/slowly turning up from speed 5-8 repeat with other half and serve.

    Lovely warming soup, I found it a bit sweet with the honey, so next time will leave it out. Also used olive oil in place of ghee which I never buy. Thanks for the recipe.
