Beetroot gazpacho with horseradish creme

Ingredients

1 litre(s)

Beetroot gazpacho

  • 300 g beetroots, cooked, peeled and roughly chopped
  • 100 g potatoes, peeled and roughly chopped
  • 1 tbsp TM vegetable stock
  • 1 Lebanese cucumber, roughly chopped (about 130g)
  • 1-2 Spring Onion/Shallots, roughly chopped (about 30-60g), to taste
  • 250 g natural yoghurt
  • 2 tbsp freshly squeezed lemon juice, plus extra to taste
  • 100-150 g water, chilled
  • sea salt, to taste
  • white pepper, to taste

Horseradish creme

  • 100 g natural yoghurt
  • 1-2 tbsp fresh horseradish, grated, or from a jar
  • 1-1.5 tbsp fresh chives, finely chopped to serve

Recipe's preparation

    Beetroot gazpacho
  1. Place beetroot and potato into mixing bowl and chop 5 sec/speed 8. Scrape down sides of mixing bowl.

  2. Add stock and 500g of water and cook 15min/100°C/speed 2. Allow to cool completely in mixing bowl before proceeding (about one hour).

  3. Add cucumber, spring onions , yoghurt, lemon juice and water and blend 1-1½ min/speed 7, until smooth. Season to taste with salt and pepper and check consistency, if you would prefer a lighter soup, add remaining water and combine 5 sec/speed 5. Set aside in bowl while you make your creme.

  4. Horseradish creme
  5. Combine horseradish and yoghurt in a small bowl.

  6. To serve, pour chilled beetroot gazpacho into bowls and top with horseradish creme and a sprinkle of chives.

Tip

Serve beetroot gazpacho with fresh crusty bread of choice for a light meal or as a starter.

Traditionally, this soup is served with finely chopped pieces of boiled egg, cucumber and radish mixed through prior to serving.

All ingredients used are organic and/or locally sourced, where possible. This recipe is gluten free.
