Bouillabaisse (Traditional Fish Stew)

Ingredients

  • 1 brown onion, cut into halves
  • 2 garlic cloves
  • 1 red chilli
  • 1 tbsp basil
  • 4 tomatoes, ripe, cut into halves
  • 1200 g fish stock, (see Tips)
  • 100 g dry white wine
  • 1 tbsp olive oil
  • 1 pinch saffron
  • 2 tbsp tomato paste
  • 1-2 pinches salt, to taste
  • 1-2 pinches pepper, to taste
  • 1500 g seafood mixture, e.g mussels, scallops, squid rings
  • Crusty Bread, to serve

Recipe's preparation

  1. Place onion, garlic, chilli and basil into mixing bowl and chop 5 sec/speed 6.

  2. Add all remaining ingredients, except seafood. Place Varoma dish into position and weigh seafood into it. Steam 20 min/Varoma/speed 2.

  3. Transfer seafood into mixing bowl and gently combine with aid of spatula.

  4. Pour stew between individual serving bowls and serve with crusty bread.

Tip

Fish stock can be replaced with chicken stock.

    If you cut out the stock you can make an amazing seafood marinara rather then a seafood stew, just cook the spaghetti separately. Delicious!
