Broccoli & Blue Cheese Soup

  • 40 g olive oil
  • 1 brown onion, medium
  • 1 stick Celery, roughly chopped
  • 1 leek, sliced
  • 1 potato, medium
  • 1 tablespoon Butter
  • 1 head of broccoli, roughly chopped
  • 2 tablespoons Thermomix Vegetable Stock Paste
  • 1 litre water
  • 140 g blue cheese, (variety of your choice)

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Add the oil and onion. Chop 3sec, sp 5.
  2. Scrape down sides with spatula. Cook 3min, 100C, sp 2.
  3. Add the celery, leek, potato and butter. Cook 1min, 100C, sp 1. Let rest for 5 min.
  4. Add the stock paste, water and chunks of broccoli stalk only. Cook 10min, 100C, sp 2.
  5. Add the rest of the broccoli and cook a further 5min, 100c, sp 2.
  6. Add the blue cheese and blend for 1min by starting on sp 5 and gradually increasing to sp 9.
  7. Serve garnished with a little extra blue cheese and finely chopped broccoli on top. Enjoy!
