Chilli Bean Soup
- 1 brown onion, halved
- 3 cloves garlic
- 2 tablespoons olive oil
- 2 red capsicums (peppers), roasted
- 1 long red chilli (or less to taste), seeded and sliced
- 700 ml tomato passata
- 1 tablespoon Vegetable stock paste
- 2 tablespoons tomato paste
- 415 g can red kidney beans, drained and rinsed

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
1. Place onion halves and garlic into mixing bowl, and with measuring cup in place, chop 3 sec/speed 5. Scrape down sides.
2. Add olive oil, replace measuring cup with simmer basket, and saute for 5 min/120°/speed 1.
3. Add the two roasted capsicum and sliced chilli. Chop 5 sec/speed 5. Using simmer basket on top of lid, cook 5 mins/120°/speed 1.
4. Add the rest of the ingredients, adding the water last. Only fill with water up to the Max level on bowl, which could be a little less than 3 ½ cups.
Cook 15 mins/100°/speed 2 with simmer basket on lid.
5. Blend for 1 min/speed 4 - 5.5 increasing speed gradually.
Makes 2.2 Litres soup. Serves 6 – 8. Serve hot with buttered corn bread. Suitable to freeze.

Tip
The roasted capsicum can be purchased in a jar in the pickles section of your local supermarket. This soup is delicious, served with my corn bread recipe.
