Ingredients

- 1 onion, peeled and quartered
- 3 cm ginger, fresh, piece, peeled and roughly chopped
- 1 tablespoon Thai red curry paste
- 40 g oil
- 750 g sweet potato, (Kumara), peeled and diced
- 160 g red lentils, (3/4 cup), rinsed
- 500 g vegetable stock, (2 - 3 cups) or chicken stock
- 1 tablespoon lime juice
- 1 tablespoon fish sauce
- 2 tsp brown sugar
- fresh coriander leaves, to serve
- 300 grams coconut milk
Recipe's preparation
Put onion and ginger in TM bowl. Chop 5 sec on speed 7
Add curry paste and oil. Cook 3 min at 100 C on speed 1
Add Kumara, lentils and stock. Cook 20 mins, 100 C on speed 1-2
Add coconut milk and season with lime juice, fish sauce and brown sugar
Mix to combine on speed 4, 30 sec
Serve topped with fresh cocoriandernote: Can use a combination of sweet potato, pumpkin and carrot if don't have enough sweet potato on hand.

Tasty, satisfying, filling, healthy thai soup, I enjoyed the thickness of this version - it's easier to make thick soup thinner, than thin soup thicker I think! My lunch guest was suitably impressed! Forgot the sugar which didn't matter, & added some garlic as per comments. Thx for posting.
I poached a chicken breast in
I poached a chicken breast in the varoma while it was cooking. I poured the soup into a thermoserver and shredded to chicken and added to the top of the soup. We loved it!

Yum.....This soup really hits the spot! I added a touch more water to thin it out and more again the next day prior to serving. Also I didn't have any coconut milk in the pantry, so used a can of evaporated milk with a few drops coconut essence.......Decadent!

This is a fave in our house
This is a fave in our house now, the go-to recipe when vegies are beginning to look a little sad. I've made it with sweet potato, carrot and pumpkin and all produce the same velvety, lush soup that even fussy 10 year olds request again and again!

Quite a thick soup but you could always add more stock. It was delicious. The coconut milk really added another dimension to the flavour. I had added a carrot and also blitzed a little. Thanks for adapting from Taste.

I converted this to a single serve, it was delicious.
It was a little thicker than I like my soup so I added a second portion of the coconut milk, and it was Devine.
Even at a 1/4 if the recipe, there was enough for 3 portions.

Thanks for this great recipe - I am not a fan of sweet potato so I did this to use one up and get rid of it but it was delicious and I would definitely do it again.
