Cock-a Leekie Soup with Kale
- 1.5 litres water
- 2 tablespoons Chicken stock concentrate, EDC p18
- 300 g leeks, Trimmed, Rinsed and cut into chunks
- 150 g carrots, Washed and Sliced
- 300 g Boneless, Skinless Chicken, Cut into 3cm cubes
- 50 g Kale, Shredded
- 50 g pitted prunes, Cut into quarters
- salt and pepper to taste

Recipe's preparation
2 Pour water and stock into TM bowl.
3 Add leek and carrots.
4 Place chicken on varoma tray and season with salt and pepper.
5 Cook for 15 mins, 100*, reverse and speed soft.
6 Add kale and prunes to TM bowl.
7 Cook for a further 5 mins.
8 Add chicken pieces to stock mixture and pour into thermoserver.

I've been looking for different soup recipes to try, i love the favourites but just to keep things interesting. This was a good recipe, i liked all the flavours together and didn't find the kale overpowering (i don't have a lot of kale). I think i would have added a little more chicken and i think the cooking temp needs to be varoma so that the chicken cooks in the top; i found i had to cook it longer to make sure the chicken was cooked, or either cook it seperate to the soup. Thanks
