Creamy bacon, pea and lentil soup

Soup

  • 1 onion brown
  • 1 garlic clove
  • 6 bacon rashers
  • 400 g lentils, soaked overnight in water
  • 4 tomatoes
  • 300 g green pea, fresh
  • 600 g cream
  • 20 g olive oil
  • Small bunch mint leaves
  • 2 heaped tbsp vegetable stock

Recipe's preparation

    Creamy bacon, peas and lentil soup
  1. Chop mint, 5 seconds speed 7 and set aside. 

    Add onion and garlic to Closed lid and chop for 3 seconds speed 7. 

    Add bacon to Closed lid and chop for 3 seconds speed 4 or until evenly chopped. Add oil and sauté for 2 mins 100 degrees speed 2. 

    Add tomatoes and chop 3 seconds speed 4 or until evenly crushed. 

    Add drained lentils, stock, mint and half of cream to Closed lid and cook 12 minutes 100degrees Gentle stir setting soft speed on reverse Counter-clockwise operation.

    Add peas and remaining cream and cook for another 3 minutes on same settings.

    Serve with mint leaves for garnish. Enjoy

Tip

Instead of fresh peas, you can use frozen or canned peas. 

Soak lentils overnight in 1 litre of water then drain before use or soak for 2 hrs in warm water then drain. Alternatively you can use canned lentils rather than dried and soaked.
