Creamy Cauliflower, Potato & Bacon Soup

Ingredients

6 portion(s)

Soup

  • 40 grams olive oil
  • 250 grams Fat free bacon, Diced up small
  • 3 cloves garlic
  • 1 leek, Washed and thinly sliced
  • 1/4 cauliflower, Cut into small florets
  • 400 grams Washed potatoes, Diced into 2cm cubes
  • 1 heaped tablespoon vege stock, From EDC
  • 800 grams water
  • 80 grams thickened cream

Recipe's preparation

  1. 1. Place diced bacon in the TM bowl with 20 grams olive oil, cook 5min/Varoma/speed 1. Scrape down sides, remove bacon and place on some paper towel, set aside.

    2. Add garlic to the TM bowl and  chop 3sec/speed 9, scrape down sides and add leek with 20 grams olive oil, saute for 3min/Varoma/speed 1.

    4. Add cauliflower and blitz for 3sec/speed 9. 

    5. Add diced potato, stock and water and cook for 20min/Varoma/speed 1. Check potatoes and make sure they are cooked through. 

    6. Add 1/2 the bacon and blend the soup 1min/speed 9, increase speed gradually. 

    7. Add cream and mix for 30sec/speed 4.

    Serve with left over bacon and cracked pepper.

    We love this soup. It’s a regular meal in our house. I add a bit of Parmesan with the cream in the last step. So good

    This soup was delicioUs!!! 

    We added all the bacon (instead of half) and blitzed it thru. Next time we will add some extra crispy fried bacon to the top. 

     

    Even my 3 year old loved it, and hubby cooked it alone! WiN!!!
