Curried Pumpkin Soup with Coconut Milk

Ingredients

4 portion(s)

Pumpkin Soup

  • 1 butternut pumpkin cubed
  • 1 onion, peeled cut in half
  • 30 g Butter
  • 1 clove garlic
  • 1 cm ginger
  • 1 tbsp korma curry paste, mild
  • 1 tbsp vegetable stock, concentrate
  • 500 g water
  • 250 g coconut milk

Recipe's preparation

    Pumpkin Soup
  1. Place onion, ginger, garlic in bowl blitz for 3 seconds on speed 7. Scrape down sides add in butter and curry paste.


    Saute 3 minutes varoma speed 1 (mc removed).


    Place unpeeled pumpkin, vegetable stock concentrate, water and coconut milk.


    Cook for 20 minutes on 100 degrees speed 1.


    Blend for 1 minute speed 9 gradually increasing speed from 1 to speed 9.

Tip

You can substitute the vegetable stock for chicken stock if preferred. Also you can choose a different curry paste such as a mild vindaloo paste.

    I didn't have the curry paste so I used curry powder.  I also added a teaspoon or two of TM garam masala. yum yum.  Also instead of 250ml coconut milk and 500 ml water, I used 400ml tin of coconut milk, then filled that tin with water and added that.

    Made this with 900g kent pumpkin with skin removed. Used 400g water and 100g coconut milk and used tikka paste (quirky cooking recipe). Was beautiful and gobbled up very quickly!

    I tried this one for the first time today to get rid of some leftover pumpkin in the fridge.  Added in red onion rather than a plain brown one and it's delish!  Used light coconut milk too in the hopes it makes it a little healthier and lower cal.  Definately a recipe to continue making.

    This soup is super good! The perfect lunch for this chilly day! 

    I have also added some desiccated coconut to enrich the flavour...but this is my personal taste... ( I loooove coconut!!!)
