  • 250 g shredded chicken
  • 1 can Diced Tomatoes (400g)
  • 1 can butter bean, canned, Or canellini beans
  • 1/2 bunch coriander
  • 2 Limes, More if you love lime!
  • jalapeño, To taste, start with 1 fresh or a teaspoon of bottled
  • 500 grams veg or chicken stock, Or 2 cups of water, 3 teaspoons of home made stock

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place jalapeño, tomato, stock and coriander in bowl. Chop for 7 seconds, speed 6. Check spice level is to taste.

    Add chicken and cook on reverse speed 1 for 8 min on varoma

    Add beans, Cook further 4 mins on reverse speed 1

    Squeeze in lime, check to taste. Add more as required.

    Serve with extra coriander, sour cream if you like and also some tortillas If you're wanting extra carb to fill up. Yummy!

    This was really delicious. Used left over chicken. I added some asparagus, broccoli, zucchini and carrots in the last few minutes to make this more of a stew - ate with some crusty bread.
