Pumpkin Chilli Soup

  • 1 brown onion, cut in half
  • 20 grams Butter
  • 500 grams pumpkin, cut into chunks
  • 1 sweet potato, cut into chunks
  • 3 small chilli, cut stalks off
  • 1 heaped tablespoon Vegetable stock paste, more or less to taste
  • 500 grams water
  • 1 pinch ground nutmeg
  • fresh basil leaves
  • Salt and pepper, to taste
  • 2 heaped tablespoons sour cream, optional to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Preparation
  1. 1. Place brown onion in misinig bowl and chop 3sec/speed 5 then scrape down side of bowl
    2. Add butter and saute 3min/120degress celcius
    3. Add pumpkin, sweet potato and basil and chop 15sec/speed 7 then scrape doown side of bowl
    4. Add water, vegetable stock paste and chilli and cook 20min/100degress celcius/speed 1
    5. Add sour cream (optional) and blend 1 min/speed 5 at first then gradually up to 9
    6. Season with salt/pepper/sour cream to taste

Tip

Can replace sweet potato with normal potato and also sour cream for other cream or blue cheese
