  • Awesome!...

    Submitted by Rochester on 25. April 2018 - 21:16.

    Awesome!
Even my 11 yr old who hates sweet potato loved this.
My only complaint is that it only just fed 4 of us, with no seconds although that was requested.
I strongly recommend that you double the recipe, as I will be doing the next time I make this.
I used coconut milk, rather than coconut cream, I suspect that the coconut cream would be too overwhelming.
I also put a dollop of sour cream in the soup to serve.

Tasty, but I would reduce coconut cream by about half next time, so the sweet potato flavour still comes through.

    Loved this.

I didn't have sweet potatoes when I made this the first time so just used ordinary ones and it still tasted amazing. My husband prefered it with ordinary potatoes where as I like it better with sweet. Great consistancy and so simple to make.

    Thank-you for a great recipe.
