25 grams Butter
750 grams sweet potato, Diced
2 Green Pears, Peeled and Diced
750 grams chicken stock
250 grams cream

Recipe's preparation

Sweet Potato and Pear Soup

chop onion speed 5, 3 seconds

Add butter and sauté 4 mins, speed 2, 100 degrees

Add sweet potato and Pear and sauté 2 mins, 100 degrees, speed 2

Add chicken stock and cook 25 mins, 100 degrees, speed 2

Add cream and gradually blitz speed 1-9 until at desired consistency. Season well and best served with a dollop of sour cream and fresh mint.

Simple, easy and delicious soup which i make often! I always peel sweet potato and use about 500g of firm green pears.
