Thai Chicken and Coconut Soup

  • 3 cm piecepeeled ginger
  • 1 medium sized red chilli
  • 6 Kaffir lime leaves
  • 1 stalk lemon, grass, white part only, cjut into half
  • 2 cans coconut milk (400 g each)
  • 1 tbsppalm or brown sugar
  • 20 g fish sauce
  • 500 gboneless chicken breast fillet, cubed
  • Juice 1 lime
  • Handful fresh coriander leaves
  • Handful fresh Thai basil leaves

Recipe's preparation

  1. Place ginger and chilli into TM bowl and chop for 3 sec/speed 7.Scrape down sides of bowl and add lime leaves and stalk of lemon grass, coconut milk, fish sauce and sugar and cook for 10 min/100°C/Counter-clockwise operation/speed 1.

    Add cubed chicken and cook for 6 min/100°C/ Counter-clockwise operation/Gentle stir setting.Add lime juice and stir through for 3 sec/Counter-clockwise operation/Gentle stir setting. Remove lime leaves and lemon grass before serving.Transfer to large serving bowl or individual soup bowls and garnish with coriander and basil leaves to taste. Serve with a side of jasmine rice.

    We really enjoyed this soup. Very fragrant & so easy to make. I added some more chilli & threw in some chopped asparagus with the chicken. Served the soup with some hokkien noodles. Definitely adding it to my favourites.
