Ingredients

Pear & Almond Gateau

  • 2 pears, (peeled & sliced)
  • 100 g caster sugar
  • 3 eggs
  • Rind of Lemon (Large)
  • 120 g self-raising flour
  • 75 g whole almonds
  • 30 g cream
  • handful flaked almonds
  • icing sugar, (for dusting)

Recipe's preparation

    Pear & Almond Gateau
  1. Lightly butter 24cm cake tin and line the base with baking paper.  Butter the baking paper and lightly dust with plain flour.

    2. Pre-heat oven to 180deg.

    3. Place almonds in TM bowl and mill 30secs/speed 10.  Set aside.

    4. Add lemon peel to TM bowl and grate 45secs/speed 8.  Add caster sugar and eggs and beat for 4 mins/speed 4-5.

    Add self-raising flour and almond meal and combine 10secs/speed 2.  Scrape down sides of TM bowl.

    5. Add cream and combine 10secs/speed 2.  Scrape down sides of TM bowl.

    6. Sprinkle base of prepared cake tin with half of flaked almonds and pour cake batter into tin.  Arrange pear slices on top and sprinkle with remaining almond flakes.

    7. Bake in oven for approx. 35 mins (or until skewer comes out clean) and let cool in tin for 10 minutes before turning out.

    8. Sprinkle with icing sugar and serve.
