Ingredients

Base

  • 60 g plain flour
  • 35 g self-raising flour
  • 110 g brown sugar
  • 55 g dessicated coconut
  • 100 g Butter, melted
  • 150 g pecans

Caramel

  • 395 g condensed milk, I made the cookidoo recipe and used the whole batch
  • 55 g brown sugar
  • 50 g Butter

Cheesecake topping

  • 400 g cream cheese
  • 55 g caster sugar
  • 2 eggs
  • 60 g sour cream

Recipe's preparation

    Base
  1. Preheat oven to 180c.
  2. Grease a 24cm springform tin.
  3. Add flour, brown sugar and coconut to bowl. Mix for 5 seconds on speed 5.
  4. Add melted butter. Mix for 10 seconds on speed 4 until combined.
  5. Press mixture firmly into prepared tin (use back of spoon or base of measuring cup).
  6. Bake for 10 minutes until lightly golden. Set aside to cool. I turned the oven off for the time being.
  7. Spread pecans over base. Original recipe said to chop them but I left them whole.
  8. Caramel
  9. I didn't wash the bowl out after making base. I made the batch of condensed milk from cookidoo instead of purchasing a can.
  10. Add brown sugar and butter to condensed milk and cook for 15 minutes 100 deg speed 3.
  11. Pour caramel over pecans and spread evenly and let cool for 10 minutes. Clean and dry bowl ready for cheesecake topping.
  12. Cheesecake topping
  13. Add cream cheese and sugar. Mix for 20 seconds on speed 5. Scrape down sides of bowl with spatula.
  14. Add eggs and sour cream. Mix for 15 seconds on speed 4.
  15. Preheat oven to 170 Degrees.
  16. Pour topping over caramel layer. Bake for 30-35 minutes. Centre should still have a slight wobble.
  17. Turn oven off. Cool cake in oven with door slightly ajar.
  18. Refrigerate for at leat 3 hours before slicing.
