Ingredients

Crazy Italian Chocolate Cake

  • 200 grams plain flour
  • 220 grams caster sugar
  • 50 grams cocoa powder, 70% cocoa
  • 1 1/2 level tsp salt, fine
  • 120 grams olive oil
  • 1 level tbsp balsamic vinegar
  • 3 level tsp vanilla essence
  • 375 grams water

Chocolate Icing

  • 150 grams dark chocolate
  • 125 grams Butter
  • 2 level tbsp oil

Recipe's preparation

  1. Cake




    Preheat oven to 170°C (regular bake). Grease and line a 20 cm round cake tin. Dust with cocoa powder.
    Add flour (200 g), sugar (220 g), cocoa powder (50 g), baking soda (1½ tsp), and salt (½ tsp) to mixing bowl.
    Mix 10 sec / speed 4.
    Add oil (120 g), vinegar (1 tbsp), vanilla (3 tsp), and water or coffee (375 g).
    Mix 20 sec / speed 5.
    Scrape down sides and mix again if needed until smooth.
    Pour into prepared cake tin.
    Bake for 50 min or until a skewer comes out clean.
    Cool in tin 10 min, then turn out onto wire rack.
    Dust with icing sugar or top with icing before serving.






    Icing (Optional)




    Add chopped chocolate (150 g) and coconut cream (150 g) or butter (125 g) to mixing bowl.
    Heat 3 min / 60°C / speed 2 or until melted.
    Add oil (2 tbsp).
    Mix 10 sec / speed 3.
    Allow to cool until spreadable. Spread over cooled cake using a spatula or palette knife.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
