Macadamia Brownie Cupcakes (gluten and dairy free)

Ingredients

Mini muffins

  • 230 g dark chocolate, Broken into pieces
  • 70 g almonds, Meal or Whole
  • 70 g Macadamia
  • 3 Eggs, Large
  • 60 g Honey or Rice Malt Syrup
  • 1 teaspoon Baking powder (gluten free)
  • 1/4 teaspoon sea salt

Recipe's preparation

  1. 1. Preheat the oven to 160'c and line 24 mini muffin tins with papercases.

  2. 2. Blend Chocolate and Nuts for 12 seconds, Speed 9.

  3. 3. Add Eggs, Honey/Rice Malt Syrup & Salt. Blend 30 seconds, Speed 4.

  4. 4. Fill cases almost to the top and bake 20 minutes.  Let cool in the pan.

Tip

These are great warm but even better cold out of the fridge after a day or two.  They freeze and thaw easily.
