Orange and coconut teacake

Ingredients

Cake

  • 65 g Butter, softened
  • 100 g caster sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 180 g Self Raising Flour
  • 85 g Milk
  • finely grated rind of 1 orange
  • 1 tablespoon orange juice
  • 45 g desicated coconut

Topping

  • 10 g Butter, melted
  • 2 teaspoons caster sugar

Recipe's preparation

    Cake
  1. Pre-heat oven to 180°C/160°C fan-forced. Grease a 4.5cm deep, 20cm round cake pan. Line base and side with baking paper.

  2. Place butter and sugar in tmx bowl and mix on speed 4 for 15 seconds.

  3. Add egg and vanilla extract and mix on speed 4 for 20 seconds.

  4. Add flour, milk, orange rind, orange juice and coconut and mix on speed 5 for 20 seconds.

  5. Spoon mixture into prepared pan and level top.

  6. Bake for 25 to 30 minutes or until a skewer inserted in the centre comes out clean. Stand in pan for 5 minutes. Turn, top-side up, onto a wire rack.

  7. Topping
  8. Brush hot cake with butter. Sprinkle with caster sugar. Cool. Serve.
