Ingredients

12 slice(s)

2 Eggs

  • 140 grams caster sugar
  • 1 teaspoon vanilla essence
  • 1 lemon, just the RIND and the juice
  • 230 grams Self Raising Flour
  • 500 grams Seedless Grapes

Icing Sugar to dust

Recipe's preparation

  1. Preheat oven to 200 degrees

    Insert butterfly

    Put eggs, sugar, vanilla essence, lemon rind and juice of lemon in thermomix bowl. Mix on speed 4 40-60 seconds or until thick.

    Add in Flour, mix on speed 4 / 10 seconds. Scrape down bowl then speed 4/5 seconds. 

    Put grapes into bowl and gently stir on Counter-clockwise operation speed 1 / 10-15 seconds.

    Put mix in a greased and floured round tin(20-23 cm). 

    Reduce oven temperature to 180 and cook for 30-40 minutes

    Let it cool then dust with icing sugar and serve with a dollop of cream.

Tip

This cake is a HIT or MISS, you either love it or hate it. In our family it is loved and great witha cup of tea.

You can mix the grapes in a little faster if you prefer them to be a little crushed, we prefer them whole when cooking.

    Wow! I so didn't think this would work but I had 3kgs of grapes to use up so thought it was worth a shot, and it is awesome! Love this cake and lemon is lovely in it. I did have to cook mine for an hour though. Will be making this again. Seems like a more healthy alternative to cake tmrc_emoticons.)
