Chilli con carne

  • 1 medium onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 tablespoons olive oil
  • 1-2 teaspoons chilli powder, to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon Ground Coriander
  • 1 ground bay leaf, (DASH)
  • 1-2 tablespoons plain flour
  • 500 grams gravy beef, hand diced 1cm cubes
  • 400 grams caned diced tomatoes
  • 60 grams tomato paste
  • 400 grams caned red kidney beans, drained, rinsed
  • 400 grams water
  • .5 avocado, diced
  • tomato, diced(equal amount to avocado)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Chilli con carne
  1. Add onion and garlic to TM bowl, chop 3 Seconds, Speed 7, scrape down and repeat.

    Add oil and cook for 5 Minutes, Varoma, Speed 1, or until softened.

    Add chilli, cumin, coriander, bay leaf, flour and beef and cook, for 4 Minutes, Varoma, Reverse, Speed 1 or until beef has browned.

    Add tomatoes, tomato paste, kidney beans and 500ml water and stir until combined. 

    Bring to the boil 10 Minutes, 105C, Reverse, Soft then reduce heat to 90C and cook, for 30 Minutes, Soft or until meat is tender.

    Season with salt and pepper. 

    Serve topped with chopped avocado and tomato.

Tip

Cook's notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C.

I use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml.

All herbs are fresh (unless specified) and cups are lightly packed.

All vegetables are medium size and peeled, unless specified.

 

All eggs are 55-60 g, unless specified.
