Ingredients

Spiced Chicken

  • 6-8 chicken breast fillets / chicken pieces
  • 1 onion, peeled and quartered
  • 3 cloves garlic, peeled
  • 8 cm ginger, cut into 2mm discs
  • 1 tsp salt flakes
  • 1 long green chilli, deseeded if you don't like it hot!
  • 1 tsp coriander seeds
  • 2 tsp turmeric
  • 2 tsp white wine vinegar
  • 1 can coconut milk/cream
  • 2 tbsp lemon juice

Recipe's preparation

  1. Add onion, cloves, ginger, salt flakes, chilli, coriander seeds, turmeric and vinegar to TM bowl and process for 10 seconds on speed 8 into a paste.

     

    Add coconut milk/cream and lemon juice and blend for 5 seconds on speed 4.

     

    Place chicken in a large bowl and pour over marinade.  Let marinate for at least 1 hour in the fridge.

     

    Place chicken in a large baking dish and pour over marinade.

     

    Bake in oven at 180 degrees for 40 - 60mins (depending on the size of chicken pieces).  Turn chicken 2 - 3 times during cooking.

     

    Serve with steamed veges of your choice or rice.
