Creamy Satay Chicken

Ingredients

Satay Sauce

  • 1 teaspoon tumeric powder
  • 1 teaspoon fennel powder
  • 3 cloves garlic
  • 2 red chilli deseeded
  • 1/4 teaspoon salt
  • 400 grams coconut cream
  • 500 gram chicken breast or thigh, Sliced 1cm x 3cm
  • 2 --- carrots, sliced thin
  • 1 Capsicum (red), Sliced
  • 12 snow peas, washed
  • 400 grams Jasmine Rice or Basmati rice, washed well
  • 200 grams unsalted peanuts
  • 100 grams Unsalted Cashews
  • 2 tablespoon coconut oil
  • 900 grams tap water

Recipe's preparation

    Satay Sauce
  1. Add to clean DRY bowl Tumeric , Fennel, chillies , garlic and salt 

    1min / Speed 9 

  2. Add Coconut Oil  80"/ speed 4 / 2mins

  3. Add coconut cream cooked for 6min / 80'/ speed 4 

  4. Add Peanuts and cashew nuts 1min / speed 9 for a smooth suace... or 30sec / speed 5 for a chunky sauce .  Pour into Thermo Server.  Rinse Bowl out and fill with 900ml water 

  5. Place thermo basket with washed rice  into the Closed lid bowl 

    Chicken in the lower varoma basket , Be careful not to cover all the steam holes. Place Veggies in the top basket and pop on the lid. 

    16min / varoma / speed 4

  6. Place cooked rice into a bowl or 2nd thermo server if you have one. 

    rinse bowl. 

  7. Add sauce ( from earlier ) Chicken and veggies into the Bowl Closed lidCounter-clockwise operation 80"/ 8mins / Counter-clockwise operation

  8. Enjoy your Satay !!  add more or less chillies to taste

Tip

If you like a thicker chunky sauce dont blitz the sauce for as long xx
