Goats cheese, sundried tomato and proscuitto frittata

Ingredients

Frittata

  • 1 onion, halved
  • 2 garlic cloves, peeled
  • 2 teaspoon Thyme
  • 5 g olive oil
  • 175 g goats cheese
  • 100 g semi sundried tomatoes
  • 100 g prosciutto
  • 6 eggs
  • 2 egg whites
  • 2 tablespoon parmesan, grated
  • 2 tablespoon chives
  • olive oil spray

Recipe's preparation

    Frittata
  1. Preheat oven to 220 degrees Celsius


     


    Chop garlic, onion, thyme, oil 5 sec speed 5 (scrape down sides)


     


     


     


    (place oven proof frying pan in oven to warm)


     


     


     


    Cook onion mix for 5 min 100 deg reverse speed soft


     


     


     


    Spray frying pan with olive oil spray and pour mix in to bottom on frying pan evenly


     


     


     


    Scatter goats cheese, sundried tomatoes and prosciutto over top evenly and sprinkle with half the chives


     


    Mix egg whites, eggs, parmesan in bowl 4 sec speed 3 and pour over top other ingredients in pan. Sprinkle other half of chives over the top


     


    Bake for 20 min or until set in the middle


     


     


     


    serve with oven roasted cherry tomatoes and salad greens.

    The family loved this! Was polished off in a flash and asked to make more Big Smile
    Used ham instead of prosciutto, 7 whole eggs instead of egg whites and the flavour combos are delicious. Was quick and easy so will definitely make again.

    Nice family recipe. I ran out of eggs so used 4 eggs and 1 cup of buttermilk. Also replaced goats cheese with fetta cheese.
