My dad's chilli con carne

  • 750 g Beef mince
  • 2 onions, Halved
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1 --- 400g tin tomatoes, chopped
  • 90 g tomato paste
  • 1 bay leaf
  • 2 tsp cumin, Ground
  • 2 tsp Oregano, Ground
  • 2 tsp cayenne pepper, Ground
  • 4 tsp hot chilli powder
  • 2 tsp salt
  • 1.5 --- Cups beef stock
  • 1 400g tin kidney beans
  • 2 Fresh red chillies, Chopped (can use sambal oelek)

Recipe's preparation

  1. 1. Place onion and garlic in TM bowl and chop for 3s on sp 5. Scrape down bowl.
    2. Add oil and sauté for 5mins on varoma temp, sp 1.
    3. Add spices and sauté for 1min on varoma temp, sp 1.
    4. Add mince, tomatoes, tomato paste, stock and bay leaf. Cook for 15 mins on varoma temp, reverse sp 1 with simmering basket on top in place of MC.
    5. Add kidney beans. Cook for a further 10 mins on 100 degrees, reverse sp 1 with basket on top to allow sauce to reduce a little.

    To serve
    with rice
    on tortillas with salad
