Naked Beef Burgers with Beetroot and Carrot Salad and Chunky Chips

Ingredients

Beef Burger

  • 700 grams Beef mince
  • 1 brown onion, halved
  • 1 clove garlic
  • 1 carrot
  • 120 grams gluten free breadcrumbs
  • 1 egg
  • 1 tablespoon gluten free soy sauce, or tamari
  • 1/4 teaspoon salt
  • 1 tablespoon fresh rosemary
  • 2 tablespoons parsley
  • 225 grams cheese, colby or tasty
  • pepper, ground, (To taste)

Beetroot and Carrot Salad

  • 1 Beetroot, peeled, cut in pieces
  • 3 carrots, peeled, cut in chunks
  • 3 tablespoons sunflower seeds
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey, liquid

Chunky chips

  • 800 grams potatoes, Ideally Agria, scrubbed

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Chunky Chips
  1. Preheat oven to 220°C. Line two oven trays with baking paper. Preheat BBQ hot plate to medium (if using).
  2. Slice potatoes lengthways into 1.5cm rounds, then into 1.5–2cm-thick chips. Toss with a drizzle of oil on first prepared tray and season with salt. Bake for 25–30 minutes until golden. Turn once during cooking.
  3. Beef Burger
  4. Place cheese into mixing bowl and grate 6-10 sec/speed 7. Pour into bowl and set aside.
  5. Wash and dry mixing bowl thoroughly.
  6. Add breadcrumbs, mince, egg, soy sauce, salt and pepper as desired and mix 15-20 sec/speed 4, mixing with the aid of the spatula, until just combined taking care not to overmix
  7. Use a 1/3 cup measure to scoop out mixture and shape into 1.5cm thick patties. Place onto a plate and into the fridge to firm up while you make the salad.
  8. Beetroot and Carrot Salad
  9. Place beetroot, carrots, extra virgin olive oil, balsamic vinegar, and honey in mixing bowl, chop 5-7 sec/speed 5. Stir in the sunflower seeds with the spatula and place into a bowl.
  10. Cooking the Beef Burgers
  11. Heat a drizzle of oil in a large fry-pan (preferably non-stick) on medium heat. Cook patties for 3–4 minutes each side until just cooked through, then place onto second prepared tray. Top each with a sprinkle of cheese and place into oven, on highest oven rack to cook for 1–2 minutes or until cheese is melted slightly but still holds its shape. Alternatively cook through completely on BBQ (4–5 minutes each side) and place cheese on top to melt in last 1–2 minutes of cook time.
  12. To Serve
  13. Place a patty on each plate with beetroot and carrot salad and serve chunky chips on the side. Sprinkle over parsley.

Tip

These burgers are created by Nadia Lim, a NZ chef and shared on her website and in my food bag. They can be made dairy-free by omitting the cheese. They work fine with both regular soy sauce and breadcrumbs so long as they are not for someone who is allergic to gluten!
