Pork and Veal Crepes with Pasata Sauce

Ingredients

  • 500 grams of minced pork and veal
  • 1 brown onion, peeled and quarterd
  • 2 cloves of garlic, peeled
  • 240 grams of chopped rindless bacon
  • 1/2 cup of red wine
  • 2 level tablespoons of tomato paste
  • 2 level teaspoons of dried sage
  • 1/2 cup of sliced black olives, or replace with diced capsicum
  • 680 gram jar of pasata
  • 2 Cups of Mozzarella Cheese (Grated), or more
  • Crepes
  • 375 grams of Milk
  • 30 grams of diced butter
  • 150 grams of plain flour
  • 2 eggs
  • 1 level teaspoon of dried sage

Recipe's preparation

  1. Crepes

    Melt butter 2 minutes, 70 degrees speed 2

    add rest of ingredients and mix 10 seconds, speed 4, scrape down bowl and bottom of bowl and repeat

    Mixture will be like pouring cream - rest for one hour

    Filling

    chop onions and garlic 5 seconds, speed 5, scrape down bowl and repeat

    Add bacon and a splash of oil and cook 2 minutes, 100 degrees, speed 1

    Add wine and tomato paste, sage, and meat cook 20 minutes, 100 deg, reverse, spoon MC off basket on top

    Add olives and stir through - cool the mixture

    To make the crepes, oil a fry pan and pour 1/4 cup of mixture in and swirl the pan so you get a thin crepe, cook both sides and  continue - you will get 8 crepes

    To complete

    Oil a large oven proof casserole

    Place a crepe on a board, place 1/4cup of filling to centre and roll tightly and place in casserole, continue till all the crepes are filled

    Pour the pasata sauce over the  crepes and sprinkle well with the cheese

    Bake in the oven for 20 minutes 180 degrees covered with foil on the top then 10 minutes uncovered or untill the cheese is melted and golden brown
