SFC - Paleo Southern Fried Chicken - GAPS, Grain & Gluten Free

Ingredients

4 portion(s)

13 Spiced Southern Crumb Mix

  • 200 grams almonds
  • 1 teaspoon white pepper
  • 1 teaspoon Schewan Pepper, or black pepper
  • 1 teaspoon cinnamon
  • 1 teaspoon Nutmeg
  • 1 teaspoon paprika
  • 1 teaspoon Dry Sage, or 2-4 leaves fresh
  • 1 teaspoon rosemary, dry or fresh
  • 1 teaspoon dry parsley
  • 1 bay leaf, dry or fresh
  • 1 teaspoon Oregano, dry or fresh
  • 1 teaspoon Sage, dry or fresh
  • 1 teaspoon lemon zest
  • 1 teaspoon Garlic powder, or 1 clove

Chicken

  • 4 thigh or breast fillets
  • 100 grams chestnut flour, or use the crumb mix
  • 2-4 eggs, whisked
  • ghee or coconut oil, to shallow fry
  • Lemon wedges, to serve
  • Salad, to serve

Recipe's preparation

    13 Spiced Southern Crumb Mix
  1. Combine all the coating ingredients in the mixing bowl and blend for 10 secs./speed 10. 


  2. Coating the Chicken
  3. Flatten your thigh fillets or slice the breast fillets 3/4 in half lenghtways to get large, flatter snitzels. I like using thigh as it is juicer and less likely to be dry when cooked through. 

  4. Have the flour, egg and crumb mix in three bowls. If you cannot get chestnut flour you can use tapioca starch, millet flour or just use some of the cumb mix.

  5. Dust the pieces one by one in the chestnut flour and set aside on a plate. Then dip in the egg and coat in the crumb mix really well. 

  6. Have a large pan heating over medium with enough ghee to shallow fry your chicken. Meanwhile also preheat the oven to 180C and line a baking dish with paper or use one that does not need lining. 

  7. Cooking your Southern Fried Chook
  8. Over medium to low heat fry the snitzels carefully on one side for 3-5 minutes, then very carefully flip and fry for another 3-5 mins. 

  9. Transfer carefully to the baking dish and bake for 20 minutes or until cooked through. 

  10. Serve with slaw or a green salad, weges of lemon to squeeze over and mustard on the side. Also delish cold!

Tip

The crumb mix is very delicate so just take extra care when flipping it. 

 

I mix the left over crumbs into the left over egg and make a little omlet in the pan while the chicken is baking. Its a nice starter.

    just amazing. so nice to be able to have grain free fried chicken! and it is much less greasy than I imagined, even shallow fried Cooking 9 in ghee.
