Baked Broccoli and Herb Falafels

Ingredients

Falafel Mix

  • 2 cloves garlic
  • 1 small head of broccoli/ 1/2 large head, roughly chopped
  • 1/4 cup parsley
  • 1/4 cup coriander
  • 1/4 cup basil
  • 3 spring onions
  • 1 can organic chickpeas, drained and rinsed
  • 1 tablespoon Coconut Flour
  • 2 tsp cumin
  • 3 tablespoon extra virgin olive oil
  • 1 tablespoon Psyllium husk

Recipe's preparation

  1. Preheat oven to 180C.

  2. Add garlic, broccoli, herbs and spring onion to bowl and process on speed 8 for 3 seconds.

     

  3. Add chickpeas, coconut flour, cumin, olive oil and pysllium husk and process on speed 6 for 5 seconds. Scrape sides of the bowl and process again on speed 6 for 5 seconds.

     

  4. Roll mixture into 10 even balls and put into oven on a lined tray and bake for 10-15 minutes or until golden.

Tip

Brush with olive oil before baking to create a golden colour when cooked.
