Bill Grangers Corn Fritters with Avocado Salsa

Corn Fritters

  • 525 grams fresh corn kernels, approx 3-4 large corn cobs
  • 1 small red onion, halved
  • 2 eggs
  • 10 grams Coriander/Cilantro, leaves and stems
  • 1 teaspoon salt
  • black pepper, freshly ground
  • 180 grams plain flour
  • 5 grams baking powder
  • 3 tablespoons olive oil, for frying

Avocado Salsa

  • 1 avocado, one large or two small ripe
  • 1 tomato, large, seeded and diced
  • 2 tablespoons Coriander/Cilantro, roughly chopped
  • 2 tablespoons Lime or Lemon juice
  • 2 tablespoons spring onions, finely chopped
  • 1/2 teaspoon salt
  • black pepper, freshly ground

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Corn Fritters
  1. Place small red onion halves into mixing bowl and chop 3 secs/speed 7.
  2. Place 350g (approx 2 cups) of the corn kernels, eggs, coriander, salt and pepper into the mixing bowl with the onion and mix for 3 secs/speed 7 or until most of the corn is pureed (still lumpy, not completely smooth).
  3. Add remaining corn, flour and baking powder and mix for 3 secs/speed 6 or until just combined.
  4. Heat 1 tablespoon of olive oil in a fry pan over a medium/high heat.
  5. When the oil is hot, drop 2 heaped tablespoons of mixture per fritter into the pan and cook in batches for 1 1/2 minutes on each side or until golden.
  6. Transfer cooked fritters to a Thermoserver to keep warm.
  7. Avocado Salsa
  8. Combine all salsa ingredients and toss gently to combine.

Tip

Once I have cooked most of my fritter mixture I then puree the remaining mixture to cook little fritters for my baby!!! That way the whole family can enjoy this dish!!

These also make a great lunch box snack!!

Serve with poached eggs and/or bacon for a complete breakfast/brunch!!! Serving with extra coriander and/or rocket or baby spinach makes a nice addition too!!

    This is a delicious recipe. I use half corn half peas and red onion in the salsa as well. I grate a bit of cheddar cheese in the mix prior to frying, helps to brown them up. Leftovers are great in the Grandies lunchbox.

    Lovely meal for breakfast, lunch or dinner.

    I omitted the corriander and added mint and feta instead.
    They were perfect and I will make these again for sure.
    Loved them.
