  • 30 grams olive oil
  • 1 brown onion, medium sized - quartered
  • 2 cloves garlic, large
  • 2cm cube fresh ginger
  • 1 green chilli
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons Ground Coriander
  • 1 1/2 teaspoons garam masala
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 3/4 teaspoon fine-grain sea salt
  • 100 grams Chickpea Flour
  • 800 grams diced tomatoes
  • 800 grams Canned Chickpeas, rinsed and drained
  • 400 grams coconut milk

  • fresh lemon juice for serving (optional)
  • fresh coriander for serving (optional)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Add onion, garlic, ginger and chilli to the mixing bowl. Chop on Speed 5 for 4 seconds. Scrape down the sides of the bowl using the spatula.

    2. Add the oil, salt and all spices to the mixing bowl (ensure spices do not land on the middle of the blade). Mix for 5 minutes, reverse, Speed 1 on Varoma.

    3. Add chickpeas, tomatoes, chickpea flour and coconut milk to the mixing bowl. Cook for 20 minutes, reverse, Speed 1 on 100 degrees.

    4. Serve over cooked basmati or brown rice with fresh coriander and lemon juice.

Tip

As we can't thicken this curry on the stove, I use chickpea flour to achieve a thicker, gravy-like consistency. If you prefer a thinner sauce, omit the chickpea flour.

  • Good flavours - I found 100g of chick pea flour...

    Good flavours - I found 100g of chick pea flour too much tho. Had quite a "gluey" texture. I think only needs 50g of flour at most (perhaps even only 25g). With this change will certainly be one of my "go to" recipes.

    Really yummy and simple! I added a few tablespoons of tomato paste and a big swirl of honey to give the tomato flavour a nice rich smack. But would've still been delicious (and more authentic) just as the recipe states! Thanks for sharing tmrc_emoticons.)
