Cous Cous Salad with Sweet and Spicy Yoghurt Dressing

Ingredients

6 portion(s)

Cous Cous Salad

  • 150 g pumpkin, cut into cubes
  • 150 g sweet potato, cut into cubes
  • 120 g cous cous, rinsed and drained
  • 120 g mesculin lettuce mix
  • --- salad vegetables capsicum, cherry tomatoes, cucumber, avocado, about 1-2 cups
  • 2 teaspoon pine nuts

Sweet and Spicy Yoghurt Dressing

  • 125 g natural greek yogurt
  • 30 g Mayonnaise - made from Every Day Cookbook
  • 1 Lemon rid, zest and juice
  • 1 teaspoon sweet soy sauce (ABC Kecap Manis)
  • 1 teaspoon palm sugar
  • 1 clove garlic
  • 1 teaspoon sumac ground
  • 1 bunch fresh coriander leaves
  • 1 red chilli, seeds optional

Recipe's preparation

    Sweet and Spicy Yoghurt Dressing
  1. 1. Place lemon zest in TMX bowl and chop for 5 seconds on Speed 8.

    2. Add garlic, chilli and palm sugar and chop for further 5 seconds on Speed 8.

    3. Add coriander, chop for 3 seconds on Speed 5.

    4. Add yoghurt, mayonnaise, sweet soy sauce, sugar, sumac and lemon juice.  Mix for 5 seconds on Speed 4.

    1. Line the Varoma tray with wet, well-rung baking paper. Spread couscous evenly onto the Varoma tray.

    2. Place pumpkin and sweet potato into the Varoma dish.

    3. Place IL water into mixing bowl. Place Varoma into position and steam 17 min/Varoma/speed 2. Lightly stir pumpkin sweet potatp to ensure it is evenly cooked. Cook a further 7-8 min/Varoma/speed 2.

    4. Place all the salad ingredients in a large serving bowl.  Pour dressing over and mix through.  Garnish with pine nuts.

Tip



I added some slow cooked lamb shoulder that we had left over – you can enjoy with or without any meat and can steam some chicken with pumpkin and sweet potato.

    I used roasted pumpkin and sweet potato in the salad - it was very tasty and presented really well. I might go a little easy on the lemon juice next time. Will definately make again. Thank you for sharing.

    Delicious! We really enjoyed this - I have moved it straight into my favourites folder. The dressing was spicy and yum! I added pan fried chicken breasts on top of the salad and it was a full and balanced meal for my household. The dressing would be yumming with prawns also. Thanks for sharing such a wonderful dish.     Sorry to hear about the cous cous - I have never had a problem with mine. I would make sure the baking paper is wet and the cous cous is very damp. Even sprinkle some extra water on top.

    Thank you Marinachalmers for the recipe and for getting bak to me about the ingredients.   tmrc_emoticons.)   What a delicious healthy fresh salad. The flavours of the yoghurt dressing are amazing, I added half a chilli, next time I'll use the whole chilli.

    I cooked the cous cous on the stove top and baked the pumpkin and sweet potato. 

    My new favourite recipe, I'm having left overs for lunch tomorrow and not sharing  tmrc_emoticons.;)

    This was absolutely beautiful! Love

    I don't know what I did wrong with the cous cous though as it was still dry at the end. I just quickly made the cous cous the conventional way before adding it to the salad.

    I also added the shredded meat of a whole BBQ chicken. 

    A lovely salad that I look forward to having again!

    My apologies - it is an error on my end. I used to use fish sauce but found the sweet soy sauce gave the dressing a much nicer sweet/salty flavour.

    I have a question in the ingredients it lists 'sweet soy sauce' then in the method it mentions adding 'fish sauce' which I don't see in the ingredients, could you tell me which to add or do I add both, if so, how much fish sauce?
