Jerusalem Artichoke Soup

Ingredients

Soup

  • 400 grams Jerusalem artichokes, roughly chopped
  • 150 grams potatoes, skin on, roughly chopped
  • 1 tablespoon EDC stock concentrate
  • 50 grams unsulted butter
  • 500 grams water
  • 1/2 teaspoon Fresh Lemon thyme
  • lemon zest from 1 lemon
  • lemon juice from 1/2 lemon

Garnish

  • 150 grams apple
  • 20 grams extra virgin olive oil
  • salt and pepper to taste
  • 320 grams scallops
  • 40 grams unsulted butter
  • juice of 1/20 lemon
  • 4 sprigs chervil, (optional)

Recipe's preparation

    Soup
  1. 1. Wash and scrub the Jerusalem artichokes very well and then slice fairly thickly into rounds.

    2. Wash and skrub the potatoes, roughly chop to similar sizes as artichokes

    3. Place potatoes, artichokes and butter and saute 10min/100 C/ sp 1 

    4. Add thyme, stock, water, lemon zest and salt. Cook 20 min/100 C/Gentle stir setting (or until artichokes are very tender)

    5. Add lemon juice, adjust seasonong and blend 2min/sp 9, gradually increasing speed to 9

     

  2. Garnish
  3. 1. Just before serving, slice the apple into matchsticks. Place in a small bowl and add a splash of Extra Virgin Olive Oil, sea salt, freshly ground black pepper and lemon juice. Set aside. 

    2. Wash and dry the scalops. Season with salt and pepper.

    3. Fry the scallops on high hit.

    4. Divide soup onto portions. Place some apple matchsticks in the centre of each bowl. Place 3 scallops on top of the apple. Top with a sprig of chervil and some lemon juice.

    5. Enjoy!!!

Tip

You can have this soup without scallops and it will still taste delicious.

Substitute butter with Extra Vergin Olive Oil for dairy-free meal.

    A lovely soup. I didn't bother with the garnish and it was still super with a fresh crusty bread roll.
