Nut Roast

Roast Mixture

  • 250 grams toasted nuts of your choice (not peanuts)., Note that you can substitute nuts for Sunflower Seeds and Pumpkin Seeds (Pepitas)
  • 40 grams olive oil
  • 1 thick slice whole meal bread
  • 150 grams Cheddar cheese
  • 1 Large Brown Onion
  • 1 Large carrot
  • 1 zucchini
  • 1 Large clove garlic (or 2 small)
  • 3 Large Tomatoes
  • 2 tablespoons each of sage, rosemary, thyme and parsley chopped
  • 2 eggs, lightly beaten
  • 1/2 tsp nutmeg, freshly grated
  • sea salt and freshly ground black pepper
  • extra toasted nuts, seeds and herbs to garnish

Recipe's preparation

  1. Preheat the oven to 180C fan-forced.

    Place nuts into TM bowl 5seconds/speed 9. Set aside in a large bowl

    Place bread into TM bowl 5 seconds/speed 6 (should be about 1 cupful), add to nut mixture

    Place cheese in TM bowl 5 seconds / speed 9 and add to nut mixture

    Place tomatoes into TM bowl 5 seconds /speed 8, add to nut mixture

    Place onion, garlic, carrot and zucchini into TM bowl 3 seconds/speed 5

    Add olive oil and sauté 4 minutes/120°C/ speed 2

    Allow to cool slightly and add to nut mixture.

    Add herbs, salt and pepper, nutmeg and beaten eggs to mixture and mix gently with a large spoon.

    Brush a loaf tin or terrine with oil or butter and line with baking paper.

    Tip the mixture into the prepared tin or terrine and bake in the oven for 45 to 50 minutes. Stand for 10 minutes before turning out. Garnish with extra toasted nuts and herbs. Serve with vegetables and salad.

    Note can be baked in large muffin trays to create individual portions. Baking time may need to be altered.
