  • 3 Medium Onions (peeled and halved)
  • 3 Medium Zuchinnis
  • 1 red capsicum
  • 1 yellow capsicum
  • 2 Medium Aubergine's (Eggplant)
  • 2 Large Tomatoes (quatered & deseeded))
  • 1 cans diced tomatoes
  • 1 tablespoon Tomatoe Paste
  • 1 1/2 tablespoons Vegetable stock paste
  • 1 teaspoon Himalayan Salt (or other salt)
  • 3-4 sprigs fresh oregano leaves, (or 1 teaspoon of dried)
  • 3 stalks fresh basil leaves, (or 1 teaspoon of dried)
  • 4 cloves garlic
  • 75 grams Olive oil (or preferred oil)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Describe the preparation steps of your recipe

  2. -Slice Aubergine into 1cm rounds and oil both sides with 45 grams (3 tablespoons ) or less of oil.

    Place on tray with baking paper and grill on high for 10-15 minutes (or until golden brown) on one side and then 5-8 minutes on the other side.

    - Add halved & peeled onions and garlic into Thermomix Closed lid

    Chop for 3 seconds / Speed 5

    - Add herbs & 45grams of oil to thermomix Closed lid

    Cook for 6 minutes / 100° /Speed Counter-clockwise operationGentle stir setting

    - Add quatered & deseeded tomatoes to thermomix Closed lid

    Chop for 3 seconds / Speed 5

    - Slice Capsicum into stripes and add to thermomix Closed lid

    - Add canned tomatoes, salt, stock, & tomatoe paste to thermomix  Closed lid

    Cook for 8 minutes / 100° / SpeedCounter-clockwise operationGentle stir setting

    Add zuchini rounds to thermomix Closed lid

    Cook for 8 minutes / 100° / SpeedCounter-clockwise operationGentle stir setting

    - Add grilled aubergine (I halved my rounds but you can also leave whole) to thermomix Closed lidCook 25 minutes / 100° / SpeedCounter-clockwise operationGentle stir setting

Tip

- I served mine on Pearl Couscous cooked in thermomix   Vegie Stock, Fresh oregano leaves and onion.

- It makes a large amount so I froze the left overs for another day.

    Really loved this recipe. Super easy and delicious. Didn't have aubergine and actually prefer without it. I also added a dash of cayenne to pump it up a bit.

    Made this for dinner tonight and it was very tasty. We didn't have yellow capsicum so we added a couple of squash instead. We only had two zucchini so we added some mushroom. A great recipe to use up extra veggies. Yes the mixing bowl was full to the brim but great recipe for serving a larger amount of people or to be able to store some in teh freezer for a later date.
