Ratatouille

  • 2 cloves garlic peeled
  • 1 Onion, medium, peeled
  • 30 g olive oil
  • 1 tablespoon oregano, dired, Can use fresh if you have it
  • 1 tablespoon basil, dried, Can use fresh if you have it
  • 1 tablespoon Parsley, Fresh if possible, again you can use dried if fresh not available
  • 1 can Diced Tomatoes (400g), with the juice
  • 1/2 Water, Rinse the can out. 1/2 fill the can
  • 3 tablespoon tomato paste concentrate
  • 1 --- MC of White wine
  • salt and pepper to taste
  • 150 g zucchini, Chopped into bite size pieces
  • 300 g eggplant, Chopped into bite size pieces
  • 100 g Geen Capscium, Chopped into bite size pieces
  • 100 g Red Capscium, Chopped into bite size pieces

Recipe's preparation

    Ratatouille
  1. Prepare the eggplant,  Cut into bitsize pieces (you may like to peel the eggplant),  place the eggplant into a colander and sprinkle very well with lots of table salt, shake it all around to make sure it is well covered in salt, set aside and allow the water to run off the eggplant,  the salt draws out the bitterness in the eggplant,  once the eggplant has drained for at least 15-20 minutes, rinse well under running water ensuring all salt is removed,  pat try on a tea towel, set aside for now.

    Place the Onion into the TM bowl, chop for 5 sec, speed 5, scrap down the sides, add the oil adn herbs adn saute for 3 min, 100o, speed 1.

    Add the tin of chopped tomatoes, water from the rinsed out tin, tomato paste & wine, mix for 2 sec, speed 3, just to combine it all together.

    Add all the vegitables, including the set aside eggplant, sitr to combine with your spatula, cook for 30 min, 100o, reverse Counter-clockwise operation, soft spoon[soft].

    You may need to check on and adjust the "liquid" as sometimes it can be too, "soup like",  it does need to have a tomato liquid just not way to much.

    Serve with fresh crusty bread and a nice piece of BBQ'd Steak or Chicken, or even some rice or pasta is good to.

    I’m not a big fan of eggplant so left it out. It was a bit runny for my liking so I would leave out the water next time. I also added a tablespoon of stock. We use this on top of steak, chicken and pork. Yum!

    This was fantastic. Had a glut of zucchini to use up, so left out the eggplant and used zucchini only and it was still yummy. We served it over corn chips and baked in the oven for veggie laden nachos. Both our girls (4 and 1) loved it.

    Didn't use eggplant but used sweet potato along with the other veggies. Worked out fine. The meal was great with pasta.  tmrc_emoticons.)
