Vegan Chilli Con Carne (for nachos)

  • 1 carrot
  • 1 onion
  • 2 garlic cloves
  • 1 Large chilli
  • 40 grams olive oil
  • 1 1/2 tsp cumin
  • 2 tsp paprika
  • 1 tsp Garlic powder
  • 1/2 tsp chilli powder
  • 1 tsp Onion powder
  • 1/2 tsp chilli flakes
  • 1/2 tsp Oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 pinch cinnamon
  • 1 pinch cloves
  • 400 grams Nut meat, Vegie Delight can or fridge packet
  • 1 tbsp veggie stock
  • 50 grams tomato paste
  • 1 can diced tomatoes
  • 1 can Lentils or kidney beans, Drained

Recipe's preparation

  1. 1. Chop carrot, 3 seconds speed 7.

    2. Add onion, garlic, chilli and chop 5 seconds speed 5. Scrape down sides.

    3. Add oil. Saute 5 mins 100 degrees speed 1.

    4. Add cumin, paprika, garlic powder, chilli powder, onion powder, chilli flakes, oregano, salt, pepper, cinnamon and cloves and cook 1 min 100 degrees speed 1.

    5. Add nut meat (if using tinned, chop speed 5 for 3 seconds), stock, tomato paste, tin tomatoes and lentils/beans. Cook 25 mins 100 degrees reverse speed soft Gentle stir setting

    Serve with warm homemade tortillas or plain corn chips, a dollop of tofutti sour cream, avacado and a handful of grated bio cheese.
