Vegan Malai Kofta (Potato Dumplings in Spiced Tomato Sauce)

Koftas

  • 650 g potato, unpeeled and chopped
  • 200 g carrot, chopped
  • 1 cup (110g) peas, frozen
  • 30 g Cashews
  • .5 Bunch coriander
  • 1 tsp salt
  • .5 tsp tumeric
  • .5 tsp pepper
  • .5 tsp cumin
  • 1 cup chickpea flour (besan)

Sauce

  • 3 tsp cumin seeds, whole
  • 1 inch piece ginger
  • 3 cup finely diced onion
  • 1 small chilli (optional)
  • 2 can tomatoes (diced or whole)
  • 70 g Cashews
  • 2 can coconut milk
  • .75 tsp garam masala
  • .75 tsp tumeric
  • .75 tsp Ground Coriander
  • .75 tsp salt
  • .75 tsp pepper
  • .5 bunch fresh coriander

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Prepare the ingredients
  1. Preheat the oven to 225 degrees.


    Toast the Cashews: Put all the cashews (100g in total) into the mixing bowl. Dry roast 5 mins, VAROMA, reverse speed 1


    Chop the Cashews: Chop the toasted cashews for 12 seconds, speed 4. Remove and reserve 40g and then mill the remaning cashews for 10 seconds speed 7. Remove from the mixing bowl and set aside.


    Chop the Coriander: Put all the coriander into the mixing bowl. Chop 3 sec/speed 6. Remove and set aside.


    Chop the onion: Chop the onion 5 sec / speed 5. Remove and set aside.


    Chop the chilli: If using, put the chilli into the mixing bowl. Chop 3 sec/speed 8. Remove and set aside with the onion.

    Chop the ginger: Put ginger into mixing bowl. Chop 7 sec / speed 7. If your coriander came with roots on, feel free to add them for extra flavour. Remove and set aside with the onion and chilli (if using)
  2. Prepare the vegetables for the koftas
  3. Place carrots into simmering basket and potatoes into the varoma. Put the peas on the varoma tray. Add 1000g of water. Cook on Varoma/20 minutes/speed 3 (or until potatoes and carrots are easily mashable with a fork).
  4. (note: if the vegetables are not easily mashable, empty the water out of the mixing bowl and shred on reverse 20 seconds / speed 5 or until coarsely grated)
  5. Transfer to a large mixing bowl to cool.
  6. Make the sauce
  7. Add 1 TBSP oil to bowl and heat 2 min / VAROMA / Gentle stir setting

    Add the cumin seeds and cook until they begin to sizzle (about 5 min / VAROMA / Gentle stir setting )

    Add onion, ginger and chilli if using. Cook 5 minutes / VAROMA / speed 3

    Add tinned tomatoes and cook 3 minutes / 98 / speed 3

    Blend 20 sec / speed 5 or until smooth.

    Add remaining ingredients. It should almost fill the mixing bowl: do NOT go over the "max fill" line (you may not need all the coconut milk)

    Cook 35 minutes / 80 / speed 2.5

    Note: If the gravy is too watery, you can add some cornflour to thicken it. If it's too thick, add more water just before serving.
  8. Finish the Koftas
  9. Meanwhile, add the remaining kofta ingredients to the bowl and stir; a thick dough will form. Roll them into golf bowl sized balls and put them on a baking sheet lined with baking paper. Bake for about 10 minutes and then flip over, and then bake another 15 minutes.

    When they are done, put them in a bowl and pour the source on top. Serve immediately with rice or naan bread.
