Vegetarian Nacho Sauce
- 3 --- spring onions
- 3-5 sprigs parsley
- 2 cloves garlic
- 1 level tbsp oil
- 1-2 --- carrots, into quarters
- 1 --- zucchini, into quarters
- 1 --- red capsicum, cored and cut into four
- 400 grams tin tomatoes
- 400 grams tin kidney beans
- 80 grams tomato paste
- 2 level teaspoons honey
- 2 level teaspoons ground cumin
- 1 level tbsp dried italian herbs
- 2 level teaspoons ground paprika
- 1 level tsp salt
- 150 grams sweet corn kernels

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- To the Thermomix bowl add spring onions (choped into quaters), parsley, garlic (peeled), oil, carrots, zucchini,capsicum.
Chop 4 seconds/ speed 7/ scrape down sides of bowl.
Cook 3 mins/varoma/speed 1. (simmer basket instead of mc)
Add rest of ingredients.
Cook 15mins/100'c/speed 1 reverse
Scoop over a tray corn chips or baked vegetables. Top with cheese of choice and bake for 10 minutes in oven (180'C)
