Zucchini & Quinoa Falafels

Ingredients

Falafel Mixture

  • 1 zucchini grated (1.5 cups worth) (squeeze excess water)
  • 1 cup cooked quinoa
  • 2 heaped tablespoon almond meal
  • 1 egg
  • 2 spring onions
  • 1-2 clove garlic
  • 1 tablespoon chia seeds soaked in 3 tablespoons of water 5 mins)
  • 1 heaped teaspoon curry powder
  • 1 heaped teaspoon cayenne pepper
  • .5 heaped teaspoon paprika
  • .5 heaped teaspoon cumin
  • .5 heaped teaspoon tumeric
  • salt and pepper to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1.     Place onion and garlic into bowl. Chop on spd 7 for 3 secs. Scrape sides.

    2.     Add all other ingredients and mix on Reverse, spd 4 for 10 seconds. Scrape bowl and repeat. If needed, add another tablespoon of almond meal to mixture if still too sticky.

    3.     Grab a spoonful of mixture into your hands and shape into desired size, and then coat across a plate of sesame seeds and dulse flakes.

    4.     Once all done, pan fry with small amount of oil in a non stick pan with coconut oil for a few minutes on each side, or until golden and crunchy. Place on paper towel to drain if needed.

    5.     Accompany with lime and coriander hummus (see tips), salsa and a wrap.
